Engine 487 of the Cumbres and Toltec narrow gauge line running between Colorado and New Mexico, USA.

It is a K-36 class (Mikado) 2-8-2 steam locomotive built in 1925.

Something I've been wondering about locomotives, the designations, 2-8-2 for example, do they represent the wheels on an engine? 2 smalls in front, 8 main drive wheels and 2 smaller ones under the cab? I mean why are they always single digit numbers.... I've yet to see a 10-20-10 for example... Not sure If I'm even making any sense... lol

You're right on target. It is Whyte Notation and is only used for steam trains. It represents # of leading wheels - # of drive wheels - # of trailing wheels. You do get some 10s and 12s in the middle, but with larger numbers the wheels are coupled in groups and you get numbers like 2-10-10-2.
